Originally published in the free Newsletter alongside the Pineapple Ham recipe. There are a million versions of mashed cauliflower out there, including a different one in my own cookbook. But you've told me you like pictures, and this seemed like the appropriate accompaniment for pineapple ham, so here is another version of this time-honored dish .... Truly Low Carb™ Easy Cheesey Faux-tatoes 16 ounce bag frozen cauliflower 3 tablespoons water 1/3 cup sour cream 2 teaspoons ThickenThin™ Notstarch or 1 scoop Profibe™ 4 ounces cream cheese 1/2 cup shredded cheese of choice (cheddar pictured and analyzed) Salt and Pepper The biggest problem with most versions of this dish is that it turns out watery, no matter how well you try to drain the cauliflower. This recipe adds fiber to absorb the extra water and give more body to the cauliflower, making them seem more like potatoes. You could make these with any kind of shredded cheese, even bleu! I prefer an aged white cheddar, myself. If you want to serve mashers with gravy, just omit all of the shredded cheese and you'll be good to go.
 Place cauliflower and water in a microwavable dish and cook until soft. Drain as much water as you can from the cauliflower. I suggest putting it in a mesh drainer, as pictured, and actually pushing it against the screen with a spatula.
 Place sour cream and thickener in bowl of food processor and blend well before adding the cream cheese and most of the shredded cheese along with the drained cauli. Process until smooth.
 Place the mixture back in the serving dish and sprinkle remaining shredded cheese over the top. Add salt and pepper to taste, and return to microwave for another three to five minutes, until heated through. OR - place in the oven with the ham for the last fifteen to twenty minutes.
Serves 4 generously - per serving: 229 calories; 18.9g total fat (11.7g saturated); 8.2g carbohydrates (3.8g fiber); 8.6g protein
