Thomas Light Multi-Grain English Muffins

Thomas has taken a lot of the bad stuff and added sugars (most of the refined flour, and all of the high fructose corn syrup) out of their Light English Muffins and replaced it with added fiber and a myriad of whole grains. Good for them, but more importantly, good for you and me – this change means I can enjoy Eggs Benedict WITH the underlying half muffin, at least on occasion!

A half-muffin has 12 total carbs, but a full 4 of them come from fiber, which means that I count just 8, and that makes it very do-able ~ yippee!

They toast up perfectly, and can be found at most any store, as well as in my freezer.

INGREDIENTS: Unbleached Enriched Wheat Flour [Flour, Malted Bailey Flour, Reduced Iron, Niacin, Thiamin Mononitrate (Vitamin B1) Riboflavin (Vitamin B2), Folic Acid], Water, Modified Food Starch, Yeast, Wheat Gluten, Fiber (Soy, Sugarcane), Polydextrose, Farina, Cornmeal, Toasted Corn Germ, Natural Flavor, Preservatives (Calcium Propionate, Sorbic Acid, Potassium Sorbate), Salt, Cracked Wheat, Rye, Grain Vinegar, Whey (Milk), Leavening (Monocalcium Phosphate, Sodium Acid Pyrophosphate, Baking Soda), Datem, Malt Extract, Ground Corn, Soybean Oil, Dextrose, Cellulose Gum, Brown Rice, Oats, Mono- and Diglycerides, Xanthan Gum, Ethoxylated Mono- and Diglycerides, Soybeans, Triticale, Barley, Flaxseed, Millet, Sucralose, Sodium Stearoyl Lactylate, Citric Acid, Sodium Citrate, Natamycin (A Natural Mold Inhibitor)

Things I wondered about and had to go look up:

So, what the heck is Sugar Cane Fiber?
It is said to have insoluble fiber properties, speed bowel transit time, and contribute to the multiple fiber "matrix" for healthy colon function, as well as assisting with the mechanics of digestion. (There is no sugar in sugar cane fiber.)

And how about this “Datem”?
Datem is just an emulsifier primarily used in baking, to strengthen dough. It is an acronym for Di-Acetyl Tartaric Ester of Monoglyceride.

Thanks Karen!! I would have never even tempted myeslf by picking up the package to read the nutrition label :lol: These will definately be added back to my diet on occasion after I get through this weightloss phase :?

I've used these for a while, and love them! They taste REALLY GOOD, not just "OK for a lower carb product". And I've found them in regular and multigrain - my favorite is the multigrain.

Yum. I love these too. My family likes the BetterStart Light Multigrain that Thomas makes. Nutritional label looks pretty much the same. Not eating them right now, but I sure look forward to them again in 7 months (I hope). :)
