I can make a great one with All Bran cereal, but they do persist in putting that nasty aspartame stuff in All Bran products, so I decided I'd like to try to not use that. Flax is good for you, but flax muffins can be very dense and if there's a bit too much flax in any recipe, then I tend to taste *something* I don't like, so I have been playing with that ratio too. I've experimented with lots of plain brans; unfortunately plain wheat bran does greatly resemble cardboard, plain oat bran is a little carb-rich, and others are just plain too hard to find. Psyllium husk powder is supposed to be good fiber, but it does very strange things to some batters and I decided I don't care for it in muffins. I do have some sinfully delicious muffin recipes for Volume II already, but I wanted something I could really feel good about eating in the morning, an "everyday" recipe, and I think I've achieved that. I am excited to be able to share these with you. (There is an ingredient in them, PROFIBE, that you may not have heard of before, and I do try to avoid to doing that often, but if you have a need for more fiber, then it is probably worth hunting down.)

I experimented a little more with this product and by George, I think they've got it! when they say they found a way to reduce the slimy viscosity of vegetable fibers. The good news for us: it still thickens things! Yay. Try this easy sauce over plain yogurt, LC ice cream, cheesecake, pancakes, etc.:
1 cup fresh berries 1 scoop Profibe 1/2 cup fruit flavored SF 0-carb syrup (like DaVinci Gourmet) Mash berries with fiber powder, then add syrup slowly. Whisk over low heat until smooth. <DT>Makes 1 cup: 8 servings, 2 Tb. each Made with fresh blueberries: 16 calories, <0.5 g fat, 3 g carb (1 g fiber), per 2 Tb. serving
